Recipe: Mexican Tortillas

Hello Lovelies,


Today's post is my very first recipe post. I love anything associated with food and I am always open to trying new things. Having said that, there are couple of recipes that I will always come back to.

Mexican and Italian kitchens are my favorite. Basically anything that has tomatoes in it - I will eat it!


Today's recipe is for Mexican Tacos and I first saw the recipe in one of the Tasty Videos you can find on Facebook. This recipe was originally made with bakes peppers and I tweaked it to suit my own taste buds. You will find the recipe & instructions below:



RECIPE:


  • 1lb of Ground/Steak Mince

  • Taco Seasoning

  • 1 Onion

  • 1 Can of Black Beans (or Kidney Beans)

  • 1 Cup of Rice

  • 1 Cup of Sweetcorn

  • 1 Jar of Salsa

  • Grated Cheese

  • Tortilla Wraps

  • Sour Cream (optional)

  • Guacamole (optional)


COOKING INSTRUCTIONS:


  • Put the beef into a pre-heated frying pan.

  • In a separate pan, start boiling 1 cup of rice.

  • Once the beef starts changing the color, add taco seasoning and continuously stir.

  • Add finely chopped onion, beans (drained) and sweetcorn.

  • Once cooked, drain the rice and add to the mix.

  • Cook for another couple of minutes, until beef is done and add salsa sauce.

  • Sprinkle cheese on top to your liking.


Before serving, heat up the tortilla wraps for 30 - 45 seconds in the microwave to avoid sticking. For more defined flavor use the sour cream as spread on tortilla wrap first. Guacamole can be added on top to flavor also, however it in not a necessity.


*The above recipe will serve up to 4 adults.
